     Jessica Tilli's amazing talents were imbedded in her genes coming from a father who was also a Chef!  "My very first memory was when I was age 6.  I went to see my father at one of his restaurants where I witnessed him tossing a pizza in the air and tossing vegetables in mid air over a fire.  I thought he was a magician!  Always admiring such a great man, I saw his devotion and passion for food and I began to develop the same.  That's when I realized food was also my passion, talent, and the focus of my life."

                                                                                                                                               

     As a teen Jessica worked as a prep Chef in one of her fathers seven Italian Restaurants.  She continued on and worked for McDonalds throughout her high school years.  Growing up mainly in Florida Jessica decided she wanted to go back to her roots, and return to her original birthplace; New York.  Being back in the "Big Apple", Jessica attended and graduated from The Culinary Academy of Long Island.  She interned at the renowned Chateau Briand Restaurant and Catering Hall and gained additional experience at a popular local bakery.  Jessica, having a true passion for food wanted to place herself in surroundings that would allow her to work with many different cooking techniques for various food groups. 

      After a year, Jessica's career really took off and she began to work for a private caterer in

Connecticut called Dinner Tyme where she quickly worked her way up from prep Chef to the position of head Chef.  Dinner Tyme's reputation

is outstanding and Jessica has played a large part in contributing to their successes.  At present, Jessica continues to work as the head Chef for Dinner Tyme.  She is also the head Chef of Traditional Cooking for Immunitrition and demonstrates her culinary talents with delicious, traditionally prepared, organic, nutrient-dense foods at Immunitrition's Certified Healing Foods Specialist(CHFS) Trainings, as well as other cooking classes and natural foods demonstrations in the tri-state area.  Jessica's future plans consist of writing an organic cookbook, as well as manufacturing and distrubuting a full line of "healthier" marinades and sauces.

Note: The culture starter and the yogurt starter are two different starters.  The culture starter will not make yogurt and the yogurt starter will not make cultured vegetables.  They have different species of beneficial bacteria in each and will yield different, possibly less than desireable results.

**   READER RECIPES  **

 

 

Below are recipes submitted to us by our customers.  Through their own experimentation and creative processes they have come up with some of the most delicious recipe ideas that we'd like to pass along to you.  We hope you enjoy these healthy, very tasty suggestions!

 

 

  THICK & CREAMY FLAX SMOOTHIE - submitted by Vidya P. of Great Neck, NY

Ingredients:

 

3 heaping tablespoons freshly ground brown and golden flax seed meal

1 cup Raw Milk -or- Milk Kefir (diluted with water)

A handful of ice cubes

1 scoop undenatured whey protein (such as ImmunoPro)

1 tablespoon unsweetened organic cocoa -or- non-alcoholic flavoring (Frontier Brand is best)

1 scoop FOS (such as EcoBloom)

Liquid Stevia drops to taste

 

Instructions:

 

Place freshly ground flax seed meal into a large mug.  Cover with hot (NOT BOILING) clean, filtered water. Cover with a paper or kitchen towel.  Let this mixture stand for one hour then place in the refrigerator until cool.  It will become very thick.

 

Spoon this chilled flax seed mixture into a blender of Vitamixer.  Next, add raw milk or diluted milk kefir.  Blend thoroughly.  Add remaining ingredients and blend until smooth and creamy!  Adjust cocoa and stevia to taste.  If you have a dairy intolerance, simply leave out the raw milk or milk kefir suggested in this recipe.  In place of the milk, dissolve 2 to 3 scoops of whey protein into 1 cup filtered water.
